Weekly Menu - Rerun Edition

Between two 'sick meals' and running out of time so I have to improvise, last weeks menu got all kinds of messed up. I ended up moving all of the recipes that used canned goods or fresh that will hold for a bit to this week and using all of the ones that require the fresh vegetables that won't hold last week. Not only that... how do you put something called "Egyptian Lentils and rice" on your menu, double check your shopping list, and still forget to buy lentils?

By the way... 10 points for whoever can tell me who is in the picture and why I used it. How much am I dating myself with that picture??

1/31 - Thursday
Roasted Ratatouille, Brown Rice Pudding

2/01 - Friday
Vegetarian Golabki

2/02 - Saturday
Korean Steak (Bulgogi), brown rice

2/03 - Sunday
Diana's Egyptian Lentils & Rice

2/04 - Monday
Tomato and White Bean Soup, Apple Crisp

2/05 - Tuesday
Barefoot/WtEB Turkey Meatloaf, steamed broccoli

2/06 - Wednesday
Italian Stuffed Bell Peppers, Cucumber Salad

Have you tried the Brown Rice Pudding? If you like, I'll try it. It shows a substitute of soy milk, so I'd be able to eat it!

I haven't. The ratatouille was so good I forgot to make it. lol

I am going to make it tomorrow, so I will let you know.
